Step 1: Preparing the Soya Chaap


1. If you are using frozen chops, first soak them in hot water for 15-20 minutes.

2. Wash the chop and squeeze out excess water.

3. Now apply some salt and red chilli powder on them and fry them lightly on a pan with some oil or grill them in the oven. This improves the texture and taste of the chaap.


Step 2: Preparing the Gravy


1. Heat 2-3 tbsp oil or ghee in a pan.

2. Add bay leaves, cinnamon, cloves and black pepper. Let them crackle slightly.

3. Now add finely chopped onion or onion paste and fry till golden brown.

4. After this add ginger-garlic paste and stir for 1-2 minutes.

5. Now add tomato paste and cook until the oil separates.


Step 3: Infuse Flavor into the Gravy


1. Now add curd and keep stirring continuously so that the curd does not curdle.

2. Then add turmeric, red chili, coriander powder and salt and fry the spices well.

3. Now add cashew paste and some cream to it. Cook while stirring for a few minutes.


Step 4: Mixing and Cooking the Chaap


1. Now add the already roasted chop to the gravy and mix it well.

2. Make the gravy as per your desired thick or thin consistency by adding 1/2 cup water.

3. Cover and cook on low flame for 10-15 minutes so that the chop absorbs the juice well into the gravy.

4. Finally add kasuri methi and garam masala, add some more cream and mix.


Step 5: Preparing to Serve


Garnish the prepared Chaap Korma with green coriander and cream.
